 How To Freeze Herbs

Easy and Quick Instructions For Harvesting, Preserving and Cooking Herbs 

It's the end of September! Time to finish harvesting and start cleaning up the raised flower boxes. I had a group of participants from a Horticultural Therapy program helping me harvest tomatoes and basil. Looking at all of the basil we harvested, I realized there was more than we needed. I didn't want to waste any of it and in that moment a great idea popped into my mind. Freeze it! I have never done it before but it seemed easy enough. This would be a great way to preserve herbs and use in the winter months.

 Easy instructions for freezing herbs:

  • Rinse
  • Finely chop
  • Sprinkle into an ice cube tray
  • Pour bouillon or stock over the herbs
  • Freeze
  • Wrap the ice cube tray in plastic wrap after the liquid freezes

Try this delicious tomato sauce recipe using frozen basil with mushroom bouillon:

Ingredients

  • one garlic clove chopped
  • 3 frozen basil/mushroom bouillon ice cubes
  • tbsp olive oil
  • can of diced tomatoes
  • tsp salt
  • dry oregano
  • dry thyme
  • tbsp honey

Instructions

  • add olive oil to pan on medium heat
  • add chopped garlic to hot oil
  • add one can of diced tomatoes
  • add salt, honey, thyme, oregano, frozen basil ice cube
  • Allow sauce to come to a boil and then let simmer for 10 minutes at low heat
  • Enjoy!
